It’s so hard to come up with lunch ideas that aren’t sandwiches and don’t require a microwave! My son is quite picky so when he requested a pepperoni pizza muffin again and again I did a little happy dance. They are quick and easy to make and the whole family will love to find them in their lunch boxes! They freeze well so I take out enough for a day or two the night before to defrost over night. You could also add a variety of “toppings” if you have a more adventurous eater. I make the entire recipe in my mixer and bake in mini muffin tins. I find they fit better in the bento style lunch boxes but feel free to use standard size tins if it suits you.


Easy Mini Pizza Muffins
Ingredients
- 1/2 cup melted butter
- 1/2 cup milk
- 2 eggs
- 2 tbsp pizza sauce
- 2 cups grated mozzarella
- 1/4 cup chopped pizza pepperoni
- 2 cups flour
- 1 tbsp baking powder
- 1 tsp salt
Instructions
- Preheat oven to 350F.
- Mix melted butter, milk and egg.
- Mix in pizza sauce, mozzarella & pepperoni.
- Add flour, baking powder, salt and mix lightly.
- Scoop to make 24-30 mini muffins or 12 standard size muffins.
- Bake for 18-20 minutes for minis or 20-25 minutes for standard.
Notes
Having these in the freezer takes the stress out making lunch. I just pair with some fruits, veggies and a yogurt or granola bar! I hope you try out the recipe, I know your kiddos will love them!
